Coat slices of sweet potato with 1/2 tbsp of corn starch
Rinse and dry eggplant.
Chop up one third of a pack of tofu into thin slices that are divisible by 4. Coat these strips as evenly as possible with 1/2 tbsp of corn starch, plus any left over from coating the sweet potato.
Whisk together: 1tbsp soy sauce, 1tbsp rice wine vinegar, 1 tbsp lite olive oil.
Evenly divide this mixture over each vegetable and tofu, and try to coat them with them as evenly as possible.
Divide vegetables in even groups over two sheet pans, only allowing the pieces to be 1 thick, and trying to keep each vegetable together.
Add salmon, tofu, and Chirashi rice to the remaining sheet pan. Ensure nothing touches.
