Sheet Pan Japenese Style Bowl (Donbori)

This is a mostly sheet pan dinner that is Japanese inspired. Preheat oven to 425F Cover 3 high heat safe sheet pans in foil and use bare minimum of cooking spray to coat pans. Peel and chop vegetables into thin and small pieces that will work well with chopsticks. Salt eggplant and leave in a colander to pull excess moisture and alkaline compounds out. Massage or smack kale to soften it slightly. Cut away any very woody stems. Coat slices of sweet potato with 1/2 tbsp of corn starch Rinse and dry eggplant. Chop up one third of a pack of tofu into thin slices that are divisible by 4. Coat these strips as evenly as possible with 1/2 tbsp of corn starch, plus any left over from coating the sweet potato. Whisk together: 1tbsp soy sauce, 1tbsp rice wine vinegar, 1 tbsp lite olive oil. Evenly divide this mixture over each vegetable and tofu, and try to coat them with them as evenly as possible. Divide vegetables in even groups over two sheet pans, only allowing the pieces to be 1 thick, and trying to keep each vegetable together. Add salmon, tofu, and Chirashi rice to the remaining sheet pan. Ensure nothing touches. Place all three sheet pans in the oven. In a sauce pan, whisk together: 2 tbsp soy sauce, 2tbsp rice wine vinegar, 1 tbsp mirin, 5.5 oz filtered or bottled water, 1tbsp corn starch, 1 tbsp brown sugar, 1 tsp nutritional yeast, 1-1/4 tsp ground ginger, and 1 tsp ground ginger for a sauce. Whisk and heat the sauce over medium heat till it reaches a simmer and thickens. Whisk 1 tbsp of flax seed oil into the sauce. For the first 9 minutes of cooking, open the oven door, check and rotate the pans as needed for even cooking, every 3 minutes. Wash and thinly slice scallion. Keep sauce warm, stirring regularly. As food approaches being complete, heat up a non stick skillet or griddle, coat with minimal cooking spray, and then fry over easy.
