Creamy Vegan Stroganoff

**NOTE:** this is an excellent base recipe for Stroganoff and Stroganoff-like dishes. If you wish to add a meat, meat alternative, or "featured vegetable" (eg eggplant), prepare that ingredient and add it along with the pasta. You may also prepare this vegan Stroganoff, pre-portion and refrigerate, and add 1/4 pound (pre-cooked weight) of frozen braised/shredded meat--the frozen shredded meat will thaw nicely as you reheat the pasta, and can then simply be stirred in. ========================================================================== Trim the "hair" from a medium to large bulb of fennel, and chop as you would an onion (bulb and remaining stems). Sautee fennel, onions, garlic, and mushrooms in a hot dutch oven with a splash of oil. Cook until fluid is largely expelled. Once the veggies have released their liquid, add tomato paste, paprika, mustard, salt, and black pepper. Sautee for a couple of minutes until the mixture is fully blended, then add 40 oz of water and vegan sour cream alternative, recover, and allow to come to a medium simmer. Once you've got a good medium boil going, add one pound pappardella (or whatever dry pasta you're using) to the boiling pot, reduce heat to low, and recover. Uncover and stir at three minute intervals for nine minutes total (three intervals). Add thyme and chives, stir thoroughly, and remove from heat (or reduce heat to extra-low, if you're using a gas stove). Leave uncovered to continue to cook down for another 5 minutes or so on the stored heat in your dutch oven (this WILL NOT WORK if you're using a normal pot, not a heavy dutch oven). Make sure pasta is sufficient al dente, and add additional salt to taste if necessary. Allow to rest for 5-10 minutes, and serve.
