Instructions
Preheat your oven to 400-degrees. Place 12 muffin papers into a muffin pan and lightly spray with oil if you wish. In a large bowl, mix dry ingredients together. In a smaller bowl, mix wet ingredients together. Add wet to dry ingredients and stir just enough to incorporate - do not over mix. Add 1/4-cup or so of berries, dried fruit, or nuts to the batter if you wish. Distribute the muffin batter into the 12 cups. Cook muffins for approximately 10-15 minutes or until a toothpick comes out clean.
