Feta Spinach Egg Bites

Instructions
Preheat the oven to 400 degrees Fahrenheit. Boil kettle. Place 2 cups of HOT water in a glass baking dish on the bottom rack of the oven. Fry bacon and chop it into small pieces. Wash, and chop all vegetables. Spray cupcake pans with cooking spray. Add eggs and cottage cheese to the blender and blend until smooth. Add salt & pepper and vegetables. Quick blend. Add bacon to each muffin tray. Pour the mixture into the 12 muffin tins equally. Bake for 20 minutes. Let cool and place in the refrigerator or freezer. Reheat in the microwave as needed.
