1. Blend cottage cheese until smooth with an immersion blender
2. Add cottage cheese, low-fat cream cheese, fat-free cream cheese, sugar, salt, erythritol, imitation vanilla to a large mixing bowl.
3. Add protein powder and flour into a bowl, whisking until roughly homogeneous.
4. Collect the zest and juice of one lemon and set aside.
5. Mix contents of large mixing bowl until homogeneous, slowly adding in the lemon juice, eggs, then milk, then mixed flour and protein powder through a strainer. (Detailed instructions below)
6. Spray a 10-inch springform pan with cooking spray and add a layer of parchment paper (you can cut it to shape with scissors), and spray again
7. Add batter and shake to reduce bubbles
8. (optional) Line outside of pan with 2 layers of aluminum foil to keep water out, and place pan into a larger pan or tray filled 1/3 of the way with water
9. Insert into a 475 degree preheated oven for 35-40 minutes, rotating the pan halfway through
10. Remove pan from water and allow a few hours to set
11. Remove cake from pan, plate, and enjoy, or cover in plastic wrap and keep refrigerated for up to 1 week
Detailed Mixing Instructions (Step 4)
Hand Mixer (From video, untested):
1. Mix on low for 1 minute, then scrape the sides with a rubber spatula to get any ingredients are stuck.
2. Continue mixing and scraping until homogeneous.
3. Add in lemon juice while mixing. Repeat step 2.
4. Add eggs one at a time, mixing on low. Repeat step 2 after each egg.
5. Slowly add the milk while mixing. Repeat step 2.
6. Add protein powder through a mesh strainer while mixing. Repeat step 2.
7. Add in lemon zest, optionally saving some for garnish
Stand Mixer:
1. Mix until homogeneous, on the highest speed that remains stable. Occasionally stop the mixer to scrape the side and bottom of the bowl.
2. Add the following, waiting until homogeneous before adding the next ingredient
