Cook Celery for 8 minutes in boiling water if not already softened. Mix diced turkey, frozen vegetables, onions, garlic, celery, spices, and 1 can of cream of chicken soup.
Butter bottom and sides of pie pan.
Pour chicken mixture into pie pan. Top with thawed pie crust and poke with fork or cut slits in top with knife. If you like, you can egg wash it with a lightly whipped egg white for a shiny pretty crust. (not done for this recipe)
Push crust into the side of pie dish to seal shut.
Bake at 400 for 45 minutes or 1 hour at 375 degrees. If not browned on top, place under broiler for 2 minutes. Let cool for 10 or 15 minutes before serving.
