Cut off a sheet of plastic wrap about 15" long. Place cheeses into middle of wrap; moisten hands lightly, shake off excess water, and form cheese into a log about 12" long. Wrap tightly in plastic wrap and press into a firm evenly shaped log. Twist ends to seal and refrigerate at least several hours.
When cheese is firm, unwrap and place 4 overlapping slices of the prosciutto across log, letting ends drape evenly over both sides. Add another layer in the same fashion.
Cut off another sheet of plastic and lay evenly over the prosciutto, press the prosciutto firmly but gently onto the cheese. Carefully flip the roll over, using the plastic wrap as a guide. Discard the original sheet of wrap. Drape the ends of the prosciutto over the roll from both sides to cover. Wrap the plastic wrap from each side and press firmly. Twist both ends to seal and refrigerate overnight. Slice into 12 even slices. Serve or store, tightly wrapped, in the refrigerator.
