Instructions
*Place 1 cup of olive oil (not EV or V) into the freezer for 2 to 6 hours. *Place 2 TBSP of white sugar and 1 TBSP of dry active yeast into a measuring cup. Add in enough warm (110 F) water to fill up to the 1 cup line. Let proof for 5 min. *Into a mixer with the paddle attachment add: two cups Fine Almond flour, 2 cups Vital Wheat Gluten, ½ cup Oat fiber, 2 TBSP flax seed Meal, 1 TBSP salt. Mix on low for a minute to incorporate. *While on low mix, add the yeast mixture plus enough Warm water to form a shaggy dough. Let mix for a minute or two. *With the mixer still on low slowly add the now solid oil one spoonful at a time, waiting till you can no longer see it then adding another till all has been incorporated. *Replace the Paddle with a Dough hook and let Knead on medium for 10 minutes, the dough should be smooth, light, a little springy, Soft, and draw out threads when pulled. *Place in a well greased bowl covered for 2 hours to proof *Punch down, and divide into 2 greased loaf pans, cover and let rise for another hour. *Bake in a preheated oven at 350f for 1 hour *Cool on a wire rake till cool , be careful as they have a delicate crumb. *slice into 12 pieces and serve.
