1 1/4 cup milk
2 Tbsp honey
1 packet instant yeast
3 Tbsp melted butter
1 egg
3 cups AP flour
1.5 tsp salt
Heat milk and honey to 110°f amd add yeast. Wait 5 min for it to froth. Add egg and butter and whisk.
To a mixing bowl add flour and salt.
Add wer ingredients to dry.
Mix until a shaggy dough forms. Place in oiled bowl, cover and wait one hour. Will double in size
Put parchment on a baking tray and add cornmeal.
Dump dough onto floured surface and stretch to a rectangle about 1 inch thick. Using a cup or cutter, shape mufiins.
Place them on the cornmeal and top with cornmeal. Cover and let rest 10 min.
Using a nonstick pan, lightly spray with cooking spray. Over medium heat, cook each side 3-5 min
Slice and enjoy!
