Instructions
1. Soak black beans in lemon water over night - drain and rinse - cook in slow cooker for 1.5-3 hours, until beans are easily squishable with a fork - spread beans out on a cookie sheet with parchment under and towel over to dry 1. Thaw two pounds of ground beef 2. Chop beans in the food processor 3. In a large bowl whip the eggs and then mix in the beans 4. Mix in the salt, garlic, and pepper 5. Fold in the ground beef, ensuring a good blending 6. Pre-heat the oven to 350 f 7. Weigh out the mixture into the silicone cupcake molds at 10.8 oz (on kitchen digital scale). Place cupcake cups on the pizza stone, ensuring good spacing. 8. Bake for 32 minutes.
