Place one oven rack at the bottom-most setting, and another rack in the middle. Place a cookie sheet or cake pan on the bottom rack to hold boiling water for steam.
Preheat oven to 350 degrees.
Blend egg whites and cottage cheese until smooth. Break apart sausage patties and evenly distribute between 12 standard muffin cups. Pour egg white mixture over sausages until each cup is full.
Boil water on stovetop or in electric kettle - this will be poured (very carefully) into cookie sheet to create a steam tray.
Place filled muffin pan on middle rack and cook for 25 minutes.
Remove muffin pan and let cool. Leave cookie sheet/steam tray to cool inside the oven - do not attempt to remove this tray until it is fully cooled!
Makes 12 egg bites; 6 servings.
