MAKES 6 servings FROM START TO FINISH: 50 minutes. 1. Preheat oven to 350 degrees F. 2. Prepare sauce: Place all veggies in food processor one at a time, pulsing between each addition until finely ground. Transfer the ground veggies to a large skillet and sauté over medium heat until they become fragrant and soft ~5 min. 3. Add the 2 (24 ounce) jars of pasta sauce to the veggie mix and stir until completely combined. Bring to boil, then simmer for 5 minutes. 4. To assemble the lasagna, pour generous 1-cup serving of the vegetable sauce into the bottom of 9 x 13 inch casserole dish or baking pan. 5. Next, add three of the lasagna noodles, according to package directions. Top with another generous serving of sauce then spread one-quarter of the vegan ricotta on top, using a spatula. Repeat these steps until all the noodles are used up. 6. Once you reach the end, pour the remaining sauce over the top layer of lasagna and place blobs of ricotta on top. 7. Cover tightly with foil and bake for 35 minutes, or until noodles have cooked through. Remove from oven and let cool for 15 minutes at least before cutting and serving. Refrigerate leftovers for up to 3 days.
