MAKES 4 servings FROM START TO FINISH: 45 minutes.
1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
2. Wipe mushrooms with dry paper towel or clean cloth. Don't wet them or they will become soggy.
3. Whisk together vinegar, soy, maple syrup, garlic in shallow container large enough to immerse mushrooms.
Add the mushrooms to the container and brush the marinate over their skins. Allow to marinate for 15 minutes.
4. Place the mushrooms, top side down, on the prepared baking sheet and bake for 15 minutes, reserving any marinade.
5. Remove from oven and turn over mushrooms, brushing with any remaining marinade at this point. Allow to bake for
additional 15 minutes, or until slightly browned. Serve immediately.
NOTES: For a more realistic "steak" look, you can take the mushroom out of the oven 5 minutes early and place them, top side down, on a barbecue grill, preheated to medium-high, for 5 minutes. If you need gluten-free version, use wheat-free tamari, not soy sauce.
