Preheat oven to 350 degrees F.
1.Mix eggs, vanilla, lemon zest, and coconut milk until smooth.
2.Gently add melted butter and sugar.
3.Last,stir in flour until smooth batter is formed.
4.Butter a cake round or square pan. Place a cur-to-fit piece of parchment on the bottom of the pan.
5. Pour 1/2 of batter into buttered, lined cake pan.
6.chop or halve pitted cherries. Sprinkle in chopped cherries, OR for more elegant presentation, arrange halved cherries cut side down in a tasteful design on top of batter. Don't worry if they sink a bit.
7.Carefully layer the remaining batter on top. The cherries may rise or not. It'll be fine either way.
8. Bake for 35 -40 min in oven. Should no longer be jiggly. May be light golden brown.
9. Cool. Sprinkle with powdered sugar. Chill until ready to serve. We like whipped topping on ours.
