1) Preheat oven to 350F. Line an 8” x 8” inch pan with parchment paper, leaving a 2-Inch overhang on two sides.
1a) Prepare mashed sweet potatoes - microwave frozen and mash
2) Add the mashed potatoes, eggs, honey, butter, and vanilla to a medium bowl. Whisk well to combine into a smooth mixture.
3) Add the flour, cocoa powder, baking powder and salt. Stir in to combine fully.
4) Pour batter into the prepared pan and smooth evenly with a spatula.
5) Bake for 28-30 minutes or until the center is set.
6) Remove from the oven and let cool fully In the pan before slicing
NOTE1: For a vegan alternative, can use egg substitute powder or ground flax
NOTE2: Can use any kind of oat flour, coconut flour or casava flour in place of almond flour
NOTE3: Baking time may vary depending of desired level of moistness.
