Instructions
You will need a very large skillet with high sides and a lid (or reduce the portions). This makes 5, 9 oz. servings. Total cooking time is approximately 20 minutes. Dice vegetables and ham. Saute vegetables and ham in olive oil over medium-high heat until soft and browned (approximately 10 minutes). Reduce heat to low and pour in egg whites. Gently mix until egg whites begin to form curds. Fold the scramble gently, then cover with the lid. Continue to monitor, mix/fold, and cover the scramble until it is fully cooked (approximately 10 minutes).
