Socca and Tomato Confit: About: This is an appetizer based on a dish common to Provence in France and in Northern Italy. It is a chickpea based flatbread. The tomatoes confit will have similarities to several toppings for bread, in and out of France and Italy. It is best served fresh and hot, but can be stored as described. Classic versions of this dish often have a lot more olive oil, and is often times cooked in cast iron, Storage: 6 Medium storage containers 6 small containers Hardware: Large mixing bowl Plate, Cover, or Plastic Wrap for the bowl Whisk Small sided baking dish Rimmed sheet pan Aluminum Foil Measuring spoons and cups Oven Spatula Spoon Coarse Sieve Chef Knife or Pizza Cutter Cutting board Mortar and Pestle IF the rosemary is no pre-ground Fork Firmware (Pantry Goods): 1-½ cup Chickpea flour 2 tsp Olive Oil 2 tbsp Water soluble fiber (wheat dextrin) ½ tsp Ground Rosemary 2 tsp Lite salt by Morton Salt, Inc. ¼ tsp Red chili crystal flakes Non-Stick Spray Software (Refrigerated Goods): Refrigerator: 10 oz or Pint container of Cherry Tomatoes 1 tsp Thyme leaves 3 tsp Garlic Minced 1-½ cups water How to Prepare: In the Large Mixing Bowl, add: 1-½ cup Chickpea flour ½ tsp of Thyme Leaves 1 tsp Lite Salt 1-½ cups water ¼ tsp ground rosemary Whisk till all ingredients are very well mixed, with no visible lumps. Cover bowl, and allow to sit at room temperature for at least one hour: or refrigerate overnight. Whisk into the batter in the bowl: 2 tbsp Water soluble fiber (wheat dextrin) ½ tbsp of full flavor Olive Oil Preheat oven to 450℉ Line a rimmed sheet tray with foil, so the foil is smooth and goes up the side smoothly. Spray with a thin layer of cooking spray. Parchment paper may also be neatly folded into the sheet tray to allow for easier transfer once the Socca is done.
