Instructions
Add olive oil to pan, heat low. Sweat peppers and onions at low heat for about 10 minutes, adding the garlic (minced) halfway through. While veggies sweat, dice the sweet potato and add it and the rest or the ingredients to the instant pot and stir. When veggies are wilted to your liking, pour the contents of the pan into the instantpot and pressure cook for 15 minutes.
