NOTE: each "serving" is two tacos. Also, I have no idea how much lettuce I'm actually using, but it's not exactly a calorie concern, so...
Put one pan over medium-low heat for the filling, and another pan over low-low heat for the tortillas.
Take 1/4 lb (PRE-cooked weight) of braised, shredded beef and put it in a hot skillet with fine-cut onion (I like long strings, but diced is fine too) and diced jalapeno. Soften the onions and jalapeno and separate the beef shreds, then add the cooked black beans. Add a tablespoon or so of cumin and garlic. Sautee for another couple minutes.
While that's sauteeing, drop two flour tortillas in your warmed pan and let them start warming up. Flip those at least once before using. While your final sautee is going and your tortillas are warming, go ahead and dice your tomato and lettuce, and make sure your sour cream and anything else you'd like to have at plating are on hand.
Just before removing filling from heat, *lightly* dust with oregano--seriously, a very very little goes a very very long way here. After dusting filling with oregano, separate it into four quarters: these are your individual filling portions.
Each filling portion makes two tacos: so, divide one portion in half again, put it in two tortillas with fresh lettuce and tomato, then dress each with a splash of sour cream and a bit (7g or so) of nice strong cheese (crumbly cheeses are especially good here), and serve.
Note that each "serving" is two tacos--so the recipe makes eight tacos in total.
Store any remaining filling portions, unused chopped lettuce, etc in deli containers for reuse the same day or the next. (Try not to let anything go more than one day old.)
