Instructions
Oil + diced onion +diced carrots + diced bell peppers into instapot/pot. Medium heat or saute on instapot. Till onions begin to sweat. Add spices {to taste {light and heavy because I never measured it}(cumin {light}, oregano {light}, ginger powder{light}, turmeric {heavy}, garlic powder {heavy}, pepper {heavy}, salt) Add chicken breast sliced into bite size pieces. Once slightly cooked. add mushrooms and garlic/jalapeno/serrano minced paste (I usually hand blend or throw in salsa maker) Add canned tomatoes & can & half full of water to get the bits from the can. Add washed lentils. Cook for 30 minutes till lentils soften or high pressure for 20 minutes till lentils soften. Re-season with salt & pepper to taste.
