Instructions
- butterfly chicken breasts. toss in olive oil, salt, and pepper. roast in 350F oven for 10 minutes. switch to broil for 5 minutes. remove. let cool. large dice. - dice onion. saute in soup pot over medium heat with 2 tbls oil and 3 generous pinches of salt. stir occasionally to prevent burning. - dice celery. add to soup pot once onions are beginning to caramelize. - grate carrots. add to soup pot once celery has softened. - mince garlic. add to soup pot. - add chicken stock. bring to light simmer. - rough chop cabbage. add to soup pot. - cover and let simmer for 45 minutes. - add diced chicken cover and simmer for 5 minutes. - season with oregano, marjoram, thyme, salt, pepper.
