Instructions
Melt butter in a stock pot. Saute garlic and onion till translucent. Add carrots, saute till carrots start to soften and take on some color. Mix corn starch and fiber and stir into the carrots, onion, and garlic, and cook for a few minutes. Whisk pea protein powder, broth concentrate, nutritional yeast, and V8 together. Mix into the pot with carrots, onion, and garlic. Stir in 6 and a quarter cups of water. Add beans. Bring to a simmer and hold at a simmer for 10-15 min. Add chopped parsley and milk, stirring well till combined. Serve or store.
