For the Granola:
1. Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
2. In a large mixing bowl, combine the oats, walnuts, and cinnamon. Stir to blend.
3. Pour in oil and 2 tbsp of honey. Mix well, until every oat and nut is lightly coated. Pour the granola onto the prepared baking sheet and use a large spoon to spread it in an even layer.
4. Bake until lightly golden, about 21-24 minutes.
5. Let the granola cool completely, for at least 45 minutes.
6. Once cooled, break it into pieces with your hands. Set aside.
For the Bark:
1. Line a rimmed baking sheet with parchment paper. Set aside.
2. Place the frozen berries in a medium saucepan and set heat to low, stirring occasionally, until the berries have softened, about 5-10 minutes.
3. Once the berries are mostly thawed, increase the heat to medium-low and add the peanut butter, dark chocolate chips, and remaining honey. Cook for about 2 minutes or until mixture starts to slightly bubble, stirring frequently.
4. Remove from heat and gradually stir in cottage cheese until all ingredients are just blended together.
5. Pour mixture onto the prepared baking sheet and spread evenly using a spatula or spoon into a rectangular shape. You want the bark to be about a 1/4 of an inch thick.
6. Sprinkle the granola on top and place the bark in the freezer for about 3 hours or until the cottage cheese is firm. Once firm, cut or break into pieces and enjoy!
Notes: You can store the leftover bark in a sealed freezer bag or airtight container for up to 3 months.
