For the Frittata:
1. Preheat oven to 375 degrees Fahrenheit and line a 9-inch pie dish with parchment paper.
2. Heat olive oil in a medium pan over medium heat. Steam the diced potatoes in the oil, stirring occasionally, until tender but firm, about 10-12 minutes. Set aside.
3. Saute (sweat) the onions and pepper over medium heat until just soft, about 3-5 minutes. Add the spinach, tomatoes, black beans, and 2 cloves of minced garlic to the pan. Cook and stir until spinach is wilted, 1-2 minutes. Then, add the potatoes and toss together gently so that the potatoes don't break apart. Season with 1/8 tsp of salt and a dash of pepper.
4. Remove mixture from the heat and spread evenly in the parchment lined pie dish, making as flat as possible.
5. In a large bowl, whisk the eggs with milk, 1/8 tsp of salt, and Italian seasoning. Pour eggs over mixture in the parchment lined pie dish. Bake for 20-25 minutes, or until eggs are set.
6. Garnish with a 1/4 cup of green onion.
For the Creamy Salsa Verde Sauce:
1. Add Greek yogurt, salsa verde, chia seeds, remaining garlic, and chopped cilantro into a blender. Blend until smooth. If you don't have a blender, you can mix all ingredients in a bowl until well combined.
2. Sprinkle the remaining green onion on top. Serve with the frittata and enjoy!
