6 cups water
3 tsp lite olive oil
½ cup chopped yellow onion
2 bags frozen, chopped spinach, (12oz apiece)
6 tbs corn starch
3 tbs broth concentrate
1.5 tsp lite salt
3 tsp dextrin fiber
1.5 tsp nutmeg
1.5 cups 2% milk
¼ cup chopped fresh parsley
3 cloves of garlic
1.5 tsp fresh Thyme and or Herb de Provance to taste
White pepper to taste
Saute onion and garlic in oil with salt
Microwave spinach till nearly done
Add starch to pot and saute
Add in cold water, dextrin, nutmeg, white pepper, and broth concentrate. Mix, add spinach.
Bring to a boil while stirring. Boil for a few moments to finish cooking spinach and meld other flavors
Mix chopped parsley, and let simmer till parsley wilts
Add milk.
Serve or portion and cool.
