My Modified (29 ct) mini banana muffins

Instructions
Prepare mini muffin pan with mini cupcake liners and pre heat oven to 375 F. Measure out all dry ingredients (except nuts) into a bowl and whisk together until fully incorporated. Melt butter and allow to cool. In a second bowl, mix together eggs, bananas, agave, and cooled butter. If using defrosted frozen ripe bananas, drain off liquid before using. Mix all wet ingredients until blended, then add dry ingredients into wet ingredients and mix with spoon until well blended. Add chopped nuts, stir to incorporate. Cut date into small pieces to add to center of muffin. Place in preheated oven for 15-20 mins. Muffins will spring back when pressed in center. Cool and enjoy! (WW=2 pt).
