1. Soak the chicken liver in 1 cup of milk or enough to cover it for 1-2 hours. You can either cut it into small (1-2 inch) chunks before or after soaking.
2. Puree the liver in a blender or food processor until almost smooth. Be careful not to overmix as it will make the meatballs too loose and fall apart. If you don't own a blender, you can chop it with a sharp knife until it is mashed to the desired texture noted above. Set aside.
3. In a medium bowl, mix the breadcrumbs together with the remaining (1 cup) of milk. Allow the milk to soak into the breadcrumbs for at least 10 minutes.
4. While breadcrumbs are soaking, add the oil and tomato sauce to a large skillet over a simmer. Then, in a large bowl, gently combine the ground turkey and chicken liver until evenly distributed.
5. Once breadcrumbs are done soaking, add the egg white, minced garlic and onion, and black pepper. Stir until well combined.
6. Add the breadcrumb mixture, parsley, and cilantro to the meat. Wet your hands and gently combine everything together using your fingers. Work the meat only as much as needed to blend with the ingredients.
7. Roll the meat mixture into 1-inch meatballs and place them in the skillet. Cover with the lid slightly askew and simmer for at least 1 hour. (Note: If you don't have a calibrated meat thermometer, you can pierce one of the meatballs to make sure it is not pink inside. If it is, return meatball to the pan and continue to cook in 10-minute increments until a safe minimum internal temperature of 165 F has been reached).
8. Top with your favorite garnishes, serve and enjoy!
