Winter White Bean Pasta
Boil 1 box of Orecchiette no. 91 (Ex DeCecco or Barilla) in 6 quarts of water* *note - save one cup of pasta water prior to draining!
Prep phase (while water is warming up):
Chop broccoli florets into small “bite sized” chunks - put in a small bowl w/ 1 cup of water and microwave for three minutes. (The goal is to speed up the steaming process, but you could also put a steamer over your boiling water once the pasta has dropped)
Slice garlic thin - ideally no chunks - and sautee for 30 seconds
Slice yellow onions thin - sauté for three to five minutes in olive oil
Slice chicken andouille sausage into thin rounds - add sausage and broccoli to sauce pan with onions and 2/3 can of cannellini beans for 3-5 minutes on medium heat.
Sauce/Binder in Food Processor or Strong Blender:
1/3 can of White Beans plus half the liquid from the can of beans
Better Than Bouillon 1 TBSP (don’t sleep on the BTB! There is a low sodium version and full of flavor!) 1 Cup cottage cheese (I prefer Daisy, but you be you)
Drain Pasta, return to pot or serving dish and add pasta water (up to one cup- adjust to your tastes but the glutens in the pasta water will help give the dish structure)
Mix in the lemon juice to 'brighten' the taste.
Add ingredients from sauce to pasta and enjoy!
Options:
Garnish with Basil
Dash of Red Pepper Flakes
Dash of grated Parmesan Cheese
Makes six servings
