Beat eggs and mix wet ingredients together in small bowl. Note 12 drops of concentrated monk fruit and 2 tablespoons of maple syrup is used as the sweetener in this recipe. Increase monkfruit drops to preferred sweetness. Mix together dry ingredients in separate bowl. In bowl of stand mixer or larger mixing bowl add 11/4 cups packed cooked steelcut oats. Add wet ingredients and beat until clumps of oatmeal are broken up. Add dry ingredients along with toasted shredded coconut and walnuts. Mix for a few minutes until dry and wet are combined. Scoop by tablespoon and form round ball in hand. Flatten to appx 2 inch cookies and bake at 385 for 12 min. Check for doneness. Add time as needed until cookies are lightly browned. Cool on rack. Note Silk brand unsweetened oat milk was used in recipe.
