Preheat oven, fan forced 200°c.
Core, peel and chop up apples into bite size pieces.
Chop the walnuts and dates into small pieces.
Put the apple pieces into a bowl, add the spices and toss to coats the apple evenly.
In a mixing bowl mix the 4 eggs and both types of sugar sugar on high for approx 5mins, until the mixture is thick and pale and well aerated.
Pour in the oil, milk and vanilla to the egg mixture and stir until combined.
In a seperate bowl or jug, sift and mix the flour and baking powder together until well combined.
Now, slowly add the flour mixture, a little at a time to the wet mixture and stir on low until just combined. Do not over mix, this will result in dense muffins.
When there are no visible streaks of flour in the batter, add the apple mix, dates and walnuts to the batter and gently fold in.
Into a pre-lined muffin tray, fill to just under the top of the liner.
Cook for 20 mins, or until golden brown on top and a skewer inserted to the middle comes out clean.
Repeat the cooking process for the 2nd batch of 12.
