Preheat oven, fan forced 200°c.
Core and chop up pears and apples into bite size pieces, leave the skins on.
Chop the pecans into small pieces.
Grate the ginger fine with a zester.
Put the pear and apple pieces in a small saucepan along with the honey, ginger, cinnamon and butter and cook on low heat until the fruit softens and the mixture is fragrant.
Remove from the heat and allow to cool.
In a mixing bowl mix the 4 eggs and sugar on high for approx 5mins, until the mixture is thick and pale and well aerated.
Pour in the oil, milk and vanilla to the egg mixture and stir until combined.
In a seperate bowl or jug, sift and mix the flour and baking powder together until well combined.
Now, slowly add the flour mixture, a little at a time to the wet mixture and stir on low until just combined. Do not over mix, this will result in dense muffins.
When there are no visible streaks of flour in the batter, add the cooled fruit and the chopped pecans to the batter and gently fold in.
Into a pre-lined muffin tray, fill to just under the top of the liner.
Cook for 20 mins, or until golden brown on top and a skewer inserted to the middle comes out clean.
Repeat the cooking process for the 2nd batch of 12.
